Budget Ketovore: Easy Chicken Kiev
This quick and easy dish is very popular, can be made with a number of “stuffing” ingredients and is always a delight to eat, especially for kids. I have given you the most basic recipe, but add anything, like curry spice or onions and celery. You can’t go wrong, so long as you include the cheese.
Will need:
4 Chicken Breasts
1 TBSP Fresh Minced Garlic (or 1 tsp fine dried)
2 TBSP Fresh Minced Parsley (or 2 tsp course, dried or 1 tsp fine dried)
1/2 tsp Salt
1/2 tsp Ground Black Pepper
4 tsp Butter (divided into 4 portions)
4 tsp Butter, melted as drizzle for on top
¾ C Shredded Mozzarella or Cheddar Cheese (divided into 4 portions)
-flat working surface
-sharp knife
-small mixing bowl
-casserole dish
-meat pins to close-up chicken
How to make it:
- Mince your garlic and parsley fine and combine.
- Shred cheese and put aside.
- On your working surface, butterfly each breast and smooth it flat, like a pizza crust and salt and pepper both sides.
- Add toppings in this order: Herb mix, 1 portion (divide mixture into 4 portions); Butter, 1 portion; Cheese,1 portion.
- Have your pins ready to roll the breast. View your chicken breast as a 4-sided square with 2 sides, a top and a bottom. First joint the sides together to meet and slightly overlap in the middle. Pin sides together. If you have overfilled the breast with stuffing, then remove a bit to secure sides in the middle. Now do the same to the top and bottom and pin into place. Use as many meat pins as you want to close-up the chicken around the cheese.
- Place rolled chicken in casserole dish and repeat with the remaining breasts.
- Drizzle melted butter over chicken rolls.
- Place in a hot over (350’) and cook for 40 minutes.
- Remove and let sit 10 minutes. Remove pins (for kids).
- Serve and enjoy.
