Budget Ketovore: Bacon Chips
Some of the best snacks are the simplest you can make and Bacon Chips fall into this category. I often have them on hand for a satisfying, health grab treat, but also to go with soup, stew and of course eggs. This is how I make mine.
1.Begin with a naturally cured bacon that doesn’t have any sugar or added preservatives. I like the sliced thick block, but regular sliced bacon really is the same.
2.I first cut the block in half and then in half again to produce a chip size piece of bacon.
3.Then, I line my frying pan evenly. I have the temperature on med-high to begin with, but as the bacon cooks it needs less heat and I will then adjust it down so that the bacon cooks at a steady rate, but isn’t so hot it burns, or so cool it doesn’t crackle and bubble up as it should when cooking.
4.As bacon pieces begin to cook, I move the center pieces to the outside and move untouched outer bacon chips to the center. I’m both trying to get an even cooking of all the pieces, but in doing so I am maintaining an even temperature of the pan and not letting the center become to hot with done pieces, while the sides of the pan go cold with totally raw pieces. Moving them around allows the pan to have a steady temperature throughout and less splatter. As the pieces cook, I keep an eye on the temperature and slowly lower it until it is med-low at the end.
5.These chips are halfway done. You want them to brown-up, so they will be crispy.
6.These chips are done. They have a nice brown edge, but aren’t black. Off they come.
7.Let your chips sit on some paper towel to cool. This will allow excess fat to be absorbed by the paper, making your chips light and crunchy.
8.Keep the bacon drippings for cooking, especially eggs or if you are preparing Keto Petfood. These drippings are full of “fat soluble vitamins”. I have a regular drippings jar I add to.
9.Pour the oil directly into your jar. Pick a jar with a lid.
10.Wipe out the pan with a paper towel to get most of the remaining drippings and then run your tap hot and add soap to the pan to breakdown the remaining oil. NEVER pour oil down your sink without first using soap and HOT water to break it down. This prevents it from collecting in your pipes.
11.When cool, enjoy. Very light and super satisfying. Possibly my favorite treat!
